Cinnamon Oatmeal Pancakes

The whole family will love these made from scratch pancakes.  They are easy and taste delicious!

Makes 10 pancakes (about 4” diameter)

1 cup Dry Whole Oats

1.5 cups Boiling Water

1 cup All Purpose Flour

2 Tbsp Sugar

2 tsp Baking Powder

1 tsp Cinnamon

2 Eggs

1 tsp Vanilla Extract

¼ cup + 1 Tbsp Milk

2 Tbsp Canola Oil

In a large mixing bowl mix the oats with boiling water and let stand for 3-4 minutes.  In a separate small bowl, blend flour, sugar, baking powder, cinnamon.  Add to the oats.  Stir well.  Slightly beat the eggs in the small mixing bowl, then stir in the vanilla and milk.  Add the egg mixture to the dry ingredients until just blended.  Do not over stir.  Your pancakes won’t be quite as fluffy if you over stir.

Use a small amount of oil in your skillet and pour batter using ¼ cup measure. Cook over medium heat.  Cook on the first side until you see the top begin to bubble (about 3-4 minutes), then flip it over and cook for another 3-4 more minutes.

Note: We serve our pancakes with a tiny bit of butter (1 tsp=35 Calories and 4 g Fat) and cinnamon and sugar (1 tsp=11 Calories, 4 g Carbohydrate).  Mix the cinnamon and sugar at a 1:3 ratio.  That means if you use 1 Tbsp of Cinnamon, use 3 Tbsp of sugar.  This is so delicious and you save 5 million calories when you don’t use syrup!

Oh, the kids love them too!

Tip: You can also use whole-wheat flour or ½ and ½ whole-wheat and all purpose.  You will increase fiber content if you do this.

Nutrition Information per Pancake: 125 Calories, 4 g Fat, 17 g Carbohydrate, 2 g Fiber, 3 g Protein
