Chocolate Almond Mini Muffins

These muffins are simple, sweet, and delicious! You would never know they are high protein!

Ingredients
  

  • 1/2 cup Pure Lean Ultra Protein Powder (or whatever protein powder you love)
  • 1/2 cup Almond Flour
  • 1/2 tsp Baking Soda
  • 1/3 cup Unsweetened Cocoa Powder
  • 1/4 cup Pure Maple Syrup
  • 2 Tbsp Coconut Oil, melted
  • 1 Whole Large egg, slightly beaten
  • 1/4 cup Unsweetened Almond Milk
  • 1/4 cup Greek Yogurt (use almond, soy, or coconut based yogurt if you are dairy free)
  • 1/4 cup Semi-sweet Chocolate Chips
  • 1/4 cup Slivered Almonds

Instructions
 

  • Preheat oven to 350 F
  • In a medium bowl, mix together protein powder, almond flour, baking powder, baking soda, and cocoa.
  • Add all wet ingredients to the bowl and stir until well combined.
  • Prepare mini muffin tin with non-stick spray (I like coconut oil spray for these).  Drop by teaspoons into muffin tins.
  • Top with chocolate chips and almonds before baking.
  • Bake for 9 minutes or until center is done.
