Chicken Tacos

Who doesn't love a great taco? These chicken tacos are simple and taste delicious--the whole family will enjoy!

- 1 Lb. Boneless, skinless Chicken Breast
- 1 Tbsp Olive Oil
- Seasoning for chicken: 1 tsp each of garlic powder and chili powder, 1/2 tsp cumin, 1/4 tsp salt and pepper
- 1/3 cup Mayonnaise
- 1 cup Salsa
- 1 tsp Cumin
- 12 Taco Shells or soft corn tortillas
- 1/2 cup Salsa
- 3 cups Green Leaf Lettuce
- 1 whole Avocado
- 3/4 cup Cilantro, chopped
- 1/2 cup Shredded Cheddar Cheese
Prepare chicken by dicing into bite sized pieces.
Add olive oil to a medium skillet and heat. Add chicken when oil starts to shimmer or is hot. Add seasoning for chicken (1 tsp garlic powder, 1 tsp chili powder, ½ tsp cumin, ¼ tsp salt, ¼ tsp ground pepper). Cook until chicken is done (160 F) or about 8minutes, stirring frequently.
Prepare sauce in a small bowl. Stir together mayonnaise, 1 cup of salsa, and cumin until well combined. Set aside.
Chop lettuce into small pieces. Chop avocado into small bite sized pieces.
To assemble: Place 2 taco shells on each plate. Fill each with chicken, about ¼ cup lettuce, 1 heaping Tbsp salsa, about 1 Tbsp avocado, cilantro and cheese.
