Oatmeal Peppermint Chocolate Cookies

These delicious peppermint cookies are so good, you won't even notice they are made with a healthier fat--avocado!

Ingredients
  

  • 1 whole Avocado
  • 1 cup Brown Sugar
  • 1 large Egg
  • 1 tsp Vanilla extract
  • 1/4 tsp Peppermint extract
  • 1/4 tsp Salt
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 cup Old Fashioned Oats
  • 1 cup AP Flour
  • 2 Tbsp Unsweetened Baking Cocoa Powder
  • 1/2 cup Semi-sweet chocolate chips

Instructions
 

  • In a large mixing bowl, mash the avocado with a fork. 
  • Add the brown sugar to the bowl and mash it together with the avocado. 
  • Add egg, vanilla, and peppermint to the bowl and mix well. 
  • Add the salt, baking powder, baking soda, oats, flour, and cocoa to the bowl.  Stir together until well combined with a large spoon, scraping the sides of the bowl.  You can use a mixer, but you do not need to.
  • Stir in the chocolate chips.
  • Bake at 350 F for about 9-10 minutes or until center of cookie is done.
