Pomegranate Yogurt Parfaits

These pomegranate yogurt parfaits are so wonderful for a snack or for breakfast!

Servings 1 parfait, also 12 servings of the crumble

- 1/2 cup Medjool Dates, Pitted
- 1/2 tsp Vanilla
- 1 cup Pecan Halves
- 1/2 tsp Cinnamon, ground
- 1/4 cup Old Fashioned Oats
- 2 Tbsp Chia Seeds
- 1/8 tsp Salt
- 1/2 cup Plain 2% Greek Yogurt
- 2 Tbsp Pomagranate Arils
Place dates, vanilla, pecans, cinnamon, oats, chia seeds and salt in a food processor and pulse until ground finely.
Place spoonfuls (about 2 Tbsp) in a mini-muffin tin. You will use one serving for each parfait.
To prepare the parfait, place the yogurt and pomegranate seeds in a small bowl, add once serving of the crumble.
