Roasted Jicima

Course Side Dish

Ingredients
  

  • 1/2 cup Chopped Onion
  • 2 cloves Garlic, minced
  • 1 tsp Olive Oil
  • 1/4 tsp Rosemary
  • 1/2 tsp Parsley
  • 3 cups Cubed Jicama

Instructions
 

  • Spread jicama on a cookie sheet with oil and herbs.  Bake at 400 for 40 minutes. 
    Add onion and garlic and bake for 15-20 more minutes.
