Savory Oatmeal

  • 1/4 Whole Bell Pepper, chopped
  • 1/4 Whole Zucchini, chopped
  • 1/2 cup Spinach, chopped
  • 2 Tbsp White onion, chopped
  • 2-3 whole Mushrooms, chopped
  • 1 slice Bacon, chopped
  • Dash smoked paprika, salt, pepper
  • 1/2 cup Old Fashioned Oats
  • 1 cup Water
  • 1 Tbsp Shredded Cheese
  • Parsley and green onion for garnish


  • Chop veggies ahead (the night before) to save time in the morning!
  • Sauté vegetables in a medium saucepan with chopped bacon for about 3 minutes or until bacon is cooked, about 4 minutes. Note: if you don't use bacon, use 1-2 tsp olive oil for your veggies.
  • Transfer veggies to another bowl. Add water to saucepan and 1/2 cup Oats. Bring to a boil. Reduce heat to simmer for 2 minutes. Note: be careful of any remaining oil in the saucepan so that when you add water it doesn't splatter.
  • Place oatmeal in a bowl with veggies, stir to combine. Top with cheese, parsley, and green onion. Enjoy!
