Who said oatmeal has to be sweet? This savory oatmeal will be the healthy highlight of your morning routine. With a little veggie prep the night before, you can whip up a serving of this delicious oatmeal in under 10 minutes! I don’t know about you, but I definitely need fast and filling ideas for my mornings. This recipe below is for 1 serving of savory oatmeal, but of course, you can double or quadruple it so it can feed the whole family! Let me know what you think!

Makes 1 Serving

Prep time (the night before): 5-10 minutes to chop veggies and bacon (depending on how fast you are at chopping!)

Cook time: 6-7 minutes

Ingredients

1/4 Bell pepper, chopped

1/4 Zucchini, chopped

1/2 cup Spinach, chopped

2 Tbsp White Onion, chopped

2-3 Mushrooms, chopped

1 Slice bacon, chopped

Dash of smoked paprika, salt, and pepper

1/2 cup Old Fashioned Oats

1 cup water

1 Tbsp Shredded Cheese

Parsley, for garnish

Green onion, for garnish

Directions

  1. Chop veggies ahead to save time in the morning.
  2. Sauté vegetables in a medium saucepan with chopped bacon for about 3 minutes or until bacon is cooked, about 4 minutes. Note: if you don’t use bacon, use 1-2 tsp olive oil for your veggies.
  3. Transfer veggies to another bowl. Add water to saucepan and 1/2 cup Oats. Bring to a boil. Reduce heat to simmer for 2 minutes. Note: be careful of any remaining oil in the saucepan so that when you add water it doesn’t splatter.
  4. Place oatmeal in bowl with veggies, stir to combine. Top with cheese, parsley, and green onion. Enjoy!
