- Trim broccoli by cutting off leaves and brown parts. Cut to size to fit in processor.
- Place broccoli, red onion, and carrot in a food processor and pulse until chopped. This equals about 6 pulses.
- Place vegetables in a large bowl and set aside.
- In a small bowl, combine mayo, rice vinegar, olive oil, honey, dijon mustard, salt and pepper. Whisk well until combined.
- Pour dressing over vegetables and mix well.
- Add cranberries and almonds. Stir to combine. Enjoy!
