Broccoli Slaw

This week I was trying to make my fresh vegetables last to reduce my number of trips to the grocery store. I had bought some fresh broccoli including the stems and I was steaming the heads for dinner. As I was about to throw away the stems, I started thinking about the waste! Here I was in need of more fresh veggies and I was throwing away a perfectly good part of this broccoli. I started brainstorming and came up with the idea of making a slaw! It was much more simple than I was expecting and it was delicious! I hope you and your family enjoy it as much as we did!
Ingredients
1 Bunch of Broccoli, including stems, makes about 4 cups chopped
¼ Small Red Onion
2 whole large Carrots
3/4 cup Dried Cranberries
½ cup Roasted Slivered Almonds
Dressing: ¼ cup Mayo, 1 Tbsp Rice Vinegar, 2 Tbsp Olive Oil, 2 Tbsp Honey, 1 tsp Dijon Mustard, salt and pepper to taste.
Directions
- Trim broccoli by cutting off leaves or any brown parts. Cut to size to fit in processor.
- Place broccoli, red onion, and carrot in a food processor and pulse until chopped. This equals about 6 pulses.
- Place vegetables in a large bowl and set aside.
- In a small bowl, combine mayo, rice vinegar, olive oil, honey, Dijon mustard, salt and pepper. Whisk together until well combined.
- Pour dressing over vegetables and mix well.
- Add cranberries and almonds, stir to combine. Enjoy!

Notes:
This broccoli slaw is so simple if you have a food processor. If you do not have a processor, a food chopper will work well also. You can reduce the sugar dramatically by reducing the amount of dried cranberries you include in this recipe. Also, I love the flavor of the red onions in this slaw, but they can often be too strong for little ones. You can substitute green onions as a milder choice.
