Easy Caprese Salad
This caprese salad is so easy and delicious! I love making different kinds of salads in the summer using the fresh vegetables right out of my garden. There is nothing like the fresh taste of home grown tomatoes and basil.
This salad is full of flavor and is a good sources of protein when using fresh mozzarella cheese. My mozzarella this month came from this cheese maker, and was absolutely amazing!
Makes 4 Servings
Ingredients
4 Small chopped tomatoes, or about 40 cherry or snacking tomatoes, quartered
4 Slices (4 oz total) of fresh mozzarella, cut into bit sized pieces
1 small bunch of fresh basil leaves (about 12 leaves total)
Balsamic Glaze:
2 Tbsp Balsamic vinegar
2 Tbsp Olive oil
2 tsp Brown sugar
Salt and pepper to taste
Directions
- Place the tomatoes, mozzarella, and basil into a medium sized bowl and stir gently to combine and distribute basil evenly through your caprese salad.
- Mix the balsamic glaze ingredients in a small bowl and whisk until well combined.
- Drizzle glaze over caprese salad.
- Serve immediately or refrigerate leftovers for 1-2 days.
