Cauliflower Rice with Corn and Green Chiles

This super simple side dish can compliment any dinner!

Ingredients
  

  • 1 bag Frozen Cauliflower Rice (about 2 cups)
  • 1/2 cup Green chile (fresh, frozen or canned)
  • 1 cup Corn kernels
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Cracked or ground Black Pepper

Method
 

  1. On the stove top add cauliflower rice, green chile, and corn to a medium saucepan and heat over medium heat until hot (about 5 minutes). 
  2. Add garlic powder and pepper and stir and cook for 1-2 more minutes or until steaming. 

Notes

Note: you may need to add 1-2 Tbsp of water depending on the state of your frozen veggies.  If they have some ice crystals, you probably do not need to add this.
