Cauliflower Rice with Corn and Green Chile

This simple cauliflower rice with corn and green chile side dish truly exceeded all of my expectations!  We had been traveling for over two weeks and when we got home I was scrounging in the freezer for dinner.  I had a bag of cauliflower rice, some frozen corn and green chile.  So, this is what I made!  I added a little garlic powder and cracked black pepper and it tasted amazing!

So I am sharing my success in this cauliflower rice with corn and green chile that came from the randomness from my freezer.  You can easily use other veggies you have in your freezer also!  Just mix them together with some green chile and garlic and you have a delicious side of veggies!  Enjoy!

Serves 4

Total Time: 10 minutes

Ingredients

1 Bag Cauliflower Rice

1/2 cup Green Chile (frozen is better than canned for flavor, but either will work)

1 cup Frozen Corn

1/2 tsp Garlic Powder

1/4 tsp Cracked or Ground Black Pepper

Directions

On the stove top add cauliflower rice, green chile, and corn to a medium saucepan and heat over medium heat until hot (about 5 minutes).  Add garlic powder and pepper and stir and cook for 1-2 more minutes or until steaming.  Note: you may need to add 1-2 Tbsp of water depending on the state of your frozen veggies.  If they have some ice crystals, you probably do not need to add this.  Enjoy!
