Pomegranate Yogurt Parfait
These pomegranate yogurt parfaits are so wonderful for a snack or for breakfast!
Here is a helpful tip: Make the crumble ahead of time and use it all week long! I like to store the right portions in a mini muffin tin in my refrigerator. Storing the crumble in the refrigerator helps keep the healthy fats fresh!

Ingredients
Cinnamon Pecan Crumble
½ cup Medjool Dates, pitted
½ tsp Vanilla
1 cup Pecan Halves, raw
½ tsp Cinnamon
¼ cup Old Fashioned Oats
2 Tbsp Chia Seeds
1/8 tsp Salt
Makes 12 servings of crumble
For the rest of the pomegranate yogurt parfait:
½ cup 2% Plain Greek Yogurt
2 Tbsp Pomegranate Arils
Directions
Place all ingredients in a food processor. Place in 12 muffin tins—this is just to portion.
To prepare parfait, place ½ cup yogurt in a small bowl, add 1 serving crumble on top. Lastly, top with pomegranate.
Tip: to get the pomegranate seeds out of the Skin, slice the pomegranate in half. Over a large bowl in the sink, hold one half of the pomegranate over the bowl with the seed side down and hit the skin side with a spoon. I know this sounds silly, but it really works!

Pomegranate Yogurt Parfaits
Ingredients
- 1/2 cup Medjool Dates, Pitted
- 1/2 tsp Vanilla
- 1 cup Pecan Halves
- 1/2 tsp Cinnamon, ground
- 1/4 cup Old Fashioned Oats
- 2 Tbsp Chia Seeds
- 1/8 tsp Salt
- 1/2 cup Plain 2% Greek Yogurt
- 2 Tbsp Pomagranate Arils
Instructions
- Place dates, vanilla, pecans, cinnamon, oats, chia seeds and salt in a food processor and pulse until ground finely.
- Place spoonfuls (about 2 Tbsp) in a mini-muffin tin. You will use one serving for each parfait.
- To prepare the parfait, place the yogurt and pomegranate seeds in a small bowl, add once serving of the crumble.
