Strawberry Basil Breakfast Cookies
Because who doesn’t want a breakfast cookie for breakfast?! This summer I have an overabundance of basil growing in my garden. I am not tired of it yet, and so I am experimenting with it in a lot of ways! These strawberry basil breakfast cookies were one of my experiments, but they really were delicious. I do get bored with breakfast sometimes, and so I always like to try new things. I am delighted when they come out really yummy!
Ingredients for Strawberry Basil Breakfast Cookies
2 1/2 cups Almond Flour
2 Tbsp Honey
1 Large Egg
2 tsp Coconut Oil
1/2 tsp Vanilla
1/2 tsp Baking Soda
Pinch of Salt
2 Cups Plain Greek Yogurt
4 Cups Sliced Strawberries
About 8 fresh basil leaves
Directions for Strawberry Basil Breakfast Cookies
- Place ingredients from Almond flour through salt in a food processor and pulse until blended and forms a dough (about 5-7 pulses).
- Form dough into 8 flat cookies and place on a parchment lined baking sheet.
- Bake cookies for 8 minutes at 350 degrees F.
- While cookies are baking, slice strawberries and finely chop fresh basil.
- When cookies are finished, top each with 1/4 cup of greek yogurt, 1/2 cup strawberry slices and sprinkle with fresh basil.
You can use other kinds of fruits also in the breakfast cookie. Use what is in season or what you have around the house. Banana, peaches, other berries, kiwi, pineapple, or pears work well also!
