Pomegranate Yogurt Parfaits

These pomegranate yogurt parfaits are so wonderful for a snack or for breakfast!

Ingredients
  

  • 1/2 cup Medjool Dates, Pitted
  • 1/2 tsp Vanilla
  • 1 cup Pecan Halves
  • 1/2 tsp Cinnamon, ground
  • 1/4 cup Old Fashioned Oats
  • 2 Tbsp Chia Seeds
  • 1/8 tsp Salt
  • 1/2 cup Plain 2% Greek Yogurt
  • 2 Tbsp Pomagranate Arils

Method
 

  1. Place dates, vanilla, pecans, cinnamon, oats, chia seeds and salt in a food processor and pulse until ground finely.
  2. Place spoonfuls (about 2 Tbsp) in a mini-muffin tin. You will use one serving for each parfait.
  3. To prepare the parfait, place the yogurt and pomegranate seeds in a small bowl, add once serving of the crumble.
