Chicken Tacos

Who doesn't love a great taco? These chicken tacos are simple and taste delicious--the whole family will enjoy!

Ingredients
  

  • 1 Lb. Boneless, skinless Chicken Breast
  • 1 Tbsp Olive Oil
  • Seasoning for chicken: 1 tsp each of garlic powder and chili powder, 1/2 tsp cumin, 1/4 tsp salt and pepper
  • 1/3 cup Mayonnaise
  • 1 cup Salsa
  • 1 tsp Cumin
  • 12 Taco Shells or soft corn tortillas
  • 1/2 cup Salsa
  • 3 cups Green Leaf Lettuce
  • 1 whole Avocado
  • 3/4 cup Cilantro, chopped
  • 1/2 cup Shredded Cheddar Cheese

Method
 

  1. Prepare chicken by dicing into bite sized pieces. 
  2. Add olive oil to a medium skillet and heat.  Add chicken when oil starts to shimmer or is hot.  Add seasoning for chicken (1 tsp garlic powder, 1 tsp chili powder, ½ tsp cumin, ¼ tsp salt, ¼ tsp ground pepper).  Cook until chicken is done (160 F) or about 8minutes, stirring frequently.
  3. Prepare sauce in a small bowl.  Stir together mayonnaise, 1 cup of salsa, and cumin until well combined.  Set aside.
  4. Chop lettuce into small pieces.  Chop avocado into small bite sized pieces.
  5. To assemble: Place 2 taco shells on each plate.  Fill each with chicken, about ¼ cup lettuce, 1 heaping Tbsp salsa, about 1 Tbsp avocado, cilantro and cheese.
