Chicken Tacos!
For those of you who know me, you know I just LOVE tacos. We eat them almost every week, but I do not eat the same tacos every week. We use a variety of proteins like shrimp, fish, beef, and chicken. These chicken tacos are my husbands favorite (I think because of the sauce)! It is a super simple sauce with mayo, salsa, and cumin that goes really well with the slightly spicy chicken. I hope you enjoy this one as much as my family does!
Serves 6

Ingredients
1 lb. Boneless, Skinless Chicken Breast
1 Tbsp Olive Oil
Seasoning for chicken:
1 tsp each Garlic and Chili Powder
½ tsp Cumin
¼ tsp each Salt and Pepper or to taste
Sauce:
1/3 cup Mayonnaise
1 cup Salsa
1 tsp Cumin

12 taco shells, or 12 soft corn tortillas
½ cup Salsa
3 cups lettuce
1 whole Avocado
¾ cup Cilanto, chopped
½ cup Shredded Cheddar cheese
Directions
- Preheat oven and follow directions to toast taco shells. If you are using corn tortillas instead, wait to heat them until just before serving and then see tips below.
- Prepare chicken by dicing into bite sized pieces.
- Drizzle olive oil in a medium skillet and heat on medium high heat. Add chicken when oil starts to shimmer or is hot. Add seasoning for chicken (1 tsp garlic powder, 1 tsp chili powder, ½ tsp cumin, ¼ tsp salt, ¼ tsp ground pepper). Cook until chicken is done (160 F) or about 8 minutes, stirring frequently.
- To prepare sauce in a small bowl, stir together mayonnaise, salsa, and cumin until well combined and then set aside.
- Chop lettuce and avocado into small pieces.
- To assemble: Place 2 taco shells on each plate. Fill each with chicken, about ¼ cup lettuce, 1 heaping Tbsp salsa, about 1 Tbsp avocado, cilantro and cheese.

- 1/2 cup Salsa
- 3 cups Green Leaf Lettuce
- 1 whole Avocado
- 3/4 cup Cilantro, chopped
- 1/2 cup Shredded Cheddar Cheese
Instructions

Note: if you use soft corn tortillas, you will save some 54 Calories and 7 grams of fat. Warm your tortillas up in a moist paper towel for 20 seconds for 4 of them.
