Chocolate Chip Baked Oatmeal

This super easy and delicious baked oatmeal is one of our favorite breakfasts!

Ingredients
  

  • 2 large Very Ripe Bananas
  • 4 large Eggs
  • 2 Tbsp Pure Maple Syrup
  • 2 tsp Baking Powder
  • 1/2 tsp Ground Cardamom
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Salt
  • 1 tsp Vanilla Extract
  • 1/2 cup Chocolate chips, semi-sweet
  • 2 cups Old Fashioned Oats

Method
 

  1. Using an 8 cup Food Processor (or mixer). Mash/blend the bananas for about 10 seconds. You want a few chunks left.
  2. Add all other ingredients to processor except chocolate chips. Mix on medium for 10 more seconds or until just blended. Don’t overmix!
  3. Grease an 8 x 8” baking pan. Pour mixture into preparedpan. Sprinkle chocolate chips on top.
  4. Bake at 350 F for 25-30 minutes or until center is set. Enjoy!

Notes

If your bananas are super ripe, you can put them in the freezer until you are ready to make this. Just make sure you give them time to thaw!
Feel free to add other mix ins! Shredded coconut, nuts, or fruits make great additions!
You can mash your bananas by hand and mix by hand, but your oatmeal will be more uniform if you use a food processor or mixer.
