Broccoli Slaw
This simple and slightly sweet salad the whole family will love!

- 1 Bunch Broccoli, including stems
- 1/4 whole Red Onion
- 2 whole Large Carrots
- 3/4 cup Dried Cranberries
- 1/2 cup Roasted Slivered Almonds
- 1/4 cup Mayonnaise
- 1 Tbsp Rice Vinegar
- 2 Tbsp Olive Oil
- 2 Tbsp Honey
- 1 tsp Dijon Mustard
- Salt and Pepper to taste
Trim broccoli by cutting off leaves and brown parts. Cut to size to fit in processor.
Place broccoli, red onion, and carrot in a food processor and pulse until chopped. This equals about 6 pulses.
Place vegetables in a large bowl and set aside.
In a small bowl, combine mayo, rice vinegar, olive oil, honey, dijon mustard, salt and pepper. Whisk well until combined.
Pour dressing over vegetables and mix well.
Add cranberries and almonds. Stir to combine. Enjoy!
