Broccoli Slaw

This simple and slightly sweet salad the whole family will love!

  • 1 Bunch Broccoli, including stems
  • 1/4 whole Red Onion
  • 2 whole Large Carrots
  • 3/4 cup Dried Cranberries
  • 1/2 cup Roasted Slivered Almonds
  • 1/4 cup Mayonnaise
  • 1 Tbsp Rice Vinegar
  • 2 Tbsp Olive Oil
  • 2 Tbsp Honey
  • 1 tsp Dijon Mustard
  • Salt and Pepper to taste


  • Trim broccoli by cutting off leaves and brown parts. Cut to size to fit in processor.
  • Place broccoli, red onion, and carrot in a food processor and pulse until chopped. This equals about 6 pulses.
  • Place vegetables in a large bowl and set aside.
  • In a small bowl, combine mayo, rice vinegar, olive oil, honey, dijon mustard, salt and pepper. Whisk well until combined.
  • Pour dressing over vegetables and mix well.
  • Add cranberries and almonds. Stir to combine. Enjoy!
