Update: I first posted this recipe about 4 years ago when we had just moved to Ireland!  We are back in the United States now and I still make this recipe quite often as my whole family just loves them.  I hope you enjoy them also!
I have been trying to find a suitable snack for our family when we go out for our Irish outings.  Since Adam is deathly allergic to peanuts, and Joshua is allergic to most of the other nuts, almonds are the only nut our family is friends with.  Here in Ireland I haven’t been able to find anything but raw almonds.  Those are a fine snack, but sometimes you need a little variety, and so I thought, maybe I should make my own!  These roasted almonds are so easy!  About 30 minutes start to finish (and 15 of that is them baking in the oven).  So here it is…

2 cups raw almonds

1Tbsp coconut oil, melted

3 Tbsp water

3 Tbsp honey

3 Tbsp sugar

1-2 tsp cinnamon

1/2 tsp salt

Place almonds on a baking tray and place in a cold oven.  Turn the oven on to 350 F or 175 C.  Bake for 15-20 minutes or until you start smelling them.  Don’t over bake them, burnt almonds are not tasty!  Mix the water, honey, and oil in a medium saucepan, and over medium heat, bring to a boil.  Add the almonds and stir until all the liquid is absorbed by the almonds.  Mix sugar, cinnamon, and salt in a large bowl and then stir in the almonds until they are all evenly coated.  Put the almonds back on the tray to cool.  Store in an airtight container for an easy and healthy snack!

Nutrition Info per serving: (Makes 8, 1/4 cup servings)  263 calories, 19 g fat, 17 g carbohydrates, 4 grams dietary fiber, 8 g protein.
