Avocado, Tomato, and Parmesan Snack Crackers

Snack choices can often get boring as “snack ruts” are very common.  Most of us just eat the same thing day after day because it is easy, and it is harder to come up with a new idea.  Today I was bored.  I was bored with my snacks.  My refrigerator was starting to be empty as it was time to go grocery shopping.  But I did have avocado, tomato, and Parmesan cheese.  I wanted a savory snack and this is what I came up with!  It was so deliciously satisfying!

This snack is a good source of protein and fiber to help keep you full and satisfied for longer.

Hint: You can also make this snack gluten-free using gluten-free crackers!

Makes 1 serving

Ingredients:

6 Triscuit Crackers (other whole-grain or gluten-free crackers will work just fine)

1/4 Avocado

3 Slices of Tomato, or 6 cherry tomatoes

1 Tbsp Shredded Parmesan Cheese

Cracked black pepper to taste

Directions:

Mash the 1/4 avocado with a fork in a small bowl.  Spread a small amount on each cracker.  Cut the tomato slices in half.  Add one half of a slice on top of the avocado.  Sprinkle with Parmesan cheese.  Grind fresh black pepper over the crackers.  The End.  So easy!  Enjoy this wonderful new snack idea!
