Bacon Jalapeño Poppers

This jalapeño poppers recipe is truly one of my favorite appetizers or snacks!  I love the spicy taste of the jalapeño with the creamy texture of cheese and the bacon on top makes it absolutely irresistible!!!

This time of year, all kinds of peppers are being harvested her in New Mexico.  Of course we love our green chile here, but I also love jalapeños!   Jalapeños are a vegetable that is really popular further south in Mexico.  They are a medium spice pepper with tons of amazing flavor!  In the late summer, I like to use as many peppers as I can since they are in season and taste amazing!

Makes 24 poppers

Prep Time: 15 minutes

Bake Time: 17 minutes

Ingredients

12 Jalapeños

6 slices Nitrate Free Bacon (about 2 oz)

4 oz Cream Cheese

½ cup Sour Cream

½ cup Shredded Cheddar Cheese

½ tsp Onion Powder

½ tsp Garlic Powder

1 tsp Parsley

Directions

  1. Preheat oven to 425 F. Prepare baking sheet by lining with foil and spray with non-stick spray.
  2. Prepare jalapeños by cutting them in half and taking out the seeds. Place jalapeños, sliced side up on your prepared baking dish.
  3. Slice bacon in half so it will fit on top of the jalapeno.
  4. In a small bowl add cream cheese, sour cream, cheddar cheese, onion powder, garlic powder, and parsley. Mix well with a spoon or fork to combine.
  5. Add a small spoonful of the cheese mixture to each jalapeño.
  6. Top each jalapeño with a piece of bacon.
  7. Bake jalapeño poppers for 17 minutes or until cheese is bubbly and jalapeño is slightly soft.

Tip:

Look to buy bacon with minimal nitrates.  It will typically say “nitrate free” or “without added nitrates” on the label.  Bacon made this way is overall better for your health, but especially better to reduce your risk of some types of cancer.  Meat processing such as curing by adding nitrates or nitrites may lead to the formation of potentially cancer-causing chemicals.  When possible, we should work to limit our intake of processed meats to lower our risk.
