This salsa is without a doubt, my favorite!  It’s sweet corn and earthy cilantro cut the spiciness of the chiles.  It looks absolutely wonderful on any table.  And as summer approaches, all of these ingredients are fresh and in season at your local supermarket.

Make sure to use fresh lime juice and fresh cilantro in this dish, the bottled or dried just doesn’t do!  Also, for a slightly milder flavor, omit the red onions.  You can also try adding some freshly minced garlic for a variation.  Lastly, be sure to use fresh or frozen corn or chiles.  The canned options are much lower in many of the vitamins and minerals.

Makes 12 servings.

1 cup fresh or frozen corn (white or yellow, doesn’t matter)

15 oz can black beans, rinsed thoroughly and drained

5-6 medium sized tomatoes, coarsely chopped

1/4 red onion, finely chopped

1 cup green or red pepper, finely chopped

2 green onions, finely chopped

1 Tbsp olive oil

2 Tbsp fresh lime juice

1/4 cup cilantro, chopped

1/2 cup fresh or frozen green chile

Combine all above ingredients in an medium sized bowl.  Cover and store tightly for up to 1 week.  ENJOY!
