Currently I would call myself a purist when talking about food. I am trying to eat less processed and more natural foods, and cooking from scratch a little more. I love my food to have a lot of flavor, but most pre-made seasonings have a lot of fillers and preservatives in them to give them a longer shelf life. So I thought I should try to make my own, and it is pretty delicious! This recipe makes about 3 recipes at a time so I don’t have to make it every time we want fajitas. I hope you enjoy it as much as I do!
Fajita Seasoning
Makes about 3 batches
1 Tbsp paprika
3/4 Tbsp salt
1/2 Tbsp chili powder
1/2 Tbsp black pepper
1/2 Tbsp garlic powder
1/2 Tbsp sugar
1/4 Tbsp onion powder
1/2 tsp cumin
Mix all ingredients together, store in airtight container until use.
For the fajitas you will need:
1/3 of your Seasoning mix
2 Large Chicken Breasts
4 large Flour Tortillas or 8 Corn Tortillas
1 Tbsp Olive Oil
1/2 Onion, chopped in strips
1 Red Bell Pepper, chopped in strips
1 Avocado
1/2 cup Salsa
Directions
- Saute 1/2 onion and 1 red pepper in 1 Tbsp olive oil until desired crispness is achieved (about 5-10 minutes). Move to a bowl and keep warm.
- Cut the chicken breasts into strips and rub 2-3 them with the fajita seasoning, and cook in the same skillet. Cook until no longer pink in the middle, about 10 minutes.
- Add chicken and sauteed vegetables in a flour tortilla (12″) or 2 small (6″) tortillas. Top each 12″ tortilla with 1/4 avocado, cilantro, and salsa. Enjoy your 30 minute meal!
