Garlic Turmeric Roasted Cauliflower

This simple side dish, garlic turmeric roasted cauliflower is so flavorful!  It is packed with wonderful nutrients from the garlic and the turmeric to help boost your immune system.  Allium from the garlic has amazing antioxidant, antiviral, and antibacterial properties.  The curcumin in the turmeric is anti inflammatory and may help to reduce risk of heart disease and Alzheimer’s disease.  Learn more about the benefits of turmeric here.  Plus, you get all the good stuff from the cauliflower like vitamin C and vitamin K!  Don’t forget, good nutrition can also be super tasty!

Serves: 6

Ingredients:

1 Large head of cauliflower (about 2 lbs)

4 Cloves of garlic, minced

3 Tbsp Olive Oil

1 tsp each of Cumin, Paprika, Turmeric

¼ tsp Ground cayenne pepper

½ tsp Salt

½ tsp Ground black pepper

Directions:

  1. Preheat oven to 450 F.
  2. Cut cauliflower off in pieces making sure to keep them fairly uniform so the pieces roast evenly.
  3. Place the cauliflower pieces in a large bowl.
  4. Mix garlic, olive oil, and spices in a small bowl.
  5. Pour spice mixture over cauliflower and stir to coat evenly.
  6. Place cauliflower on a prepared baking sheet using parchment paper and non-stick spray to prevent sticking.
  7. Roast at 450 F for 30 minutes, stirring one time in the middle.
