All through the month of January, we did a Veggie Challenge in my weekly newsletter!  We worked on increasing our vegetables, diversifying our vegetables, trying a new vegetable and trying a new recipe that included vegetables.  The last week, I asked if you would share some of the yummy vegetable recipes with all of us, and HERE THEY ARE!!!

I hope you will try some of these and continue to work on all of your goals from last month!

Turmeric Rice

1 cup Rice

¼ cup Diced Onion

4 Cloves Finely chopped Garlic

1 ½ cup Vegetable Broth

1 ½ tsp Turmeric

½ cup Frozen Peas

Salt and Pepper to Taste

1 Bay Leaf

Directions

  1. Add all ingredients to Instant Pot and stir to mix well.
  2. Cook for 5 minutes under high pressure.
  3. Note cooking will be longer if using brown rice, probably 9-10 minutes in the instant pot.

?Did you know that turmeric has wonderful anti-inflammatory properties?  It may also help increase immunity and overall health!

Ingredients
  

  • 1/4 cup Diced Onion

Kohlrabi Slaw

This recipe is very simple and it was delicious!

It uses matchstick cut raw kohlrabi, sliced apple mixed with some olive oil and lemon (juice and zest).  Jane topped it with pomegranate and pumpkin seeds!  Yum!

Roasted Jicama

Ingredients

½ cup Chopped onion

2 cloves garlic, minced

1 tsp Olive oil

¼ tsp Rosemary

½ tsp Parsley

3 cups Cubed Jicama

Directions

Spread jicama on a cookie sheet with oil and herbs.  Bake at 400 for 40 minutes.

Add onion and garlic and bake for 15-20 more minutes.

Enjoy!

Easy Caprese Salad!

THIS CAPRESE SALAD IS SO EASY AND DELICIOUS!  I love making all kinds of salads and I especially love experimenting with salads that don’t include lettuce!  This salad is full of flavor and is a good sources of protein when using fresh mozzarella cheese.
