Ground Turkey and Veggie Meatloaf
I have to admit that when I was growing up, when mom said we were having meatloaf, I did not have a happy heart! Meatloaf was definitely not my favorite food. I think mostly because many recipes for meatloaf don’t have very much flavor. This ground turkey and veggie meatloaf is the opposite. It smells amazing when it is baking, and it tastes just as good as it smells!
Ground turkey is the main ingredient in the meatloaf, but you will love how the added vegetables give it extra flavor and keep it moist. If you have picky eaters and have trouble getting them to eat their veggies, this may be the perfect dinner for your family! It is also Paleo friendly and can be whole 30 compliant if you use the right ketchup. Enjoy!
Serves: 6
Prep time: 10 minutes
Cook time: 60 minutes
Ingredients
1.5 pounds Ground Turkey
1 cup Finely Chopped Onions
1.5 cups Shredded Carrot, Zucchini, or Cooked Broccoli
½ cup Ketchup
1 Large Egg
1 cup Almond Meal
½ tsp. Salt
½ tsp. Pepper
1 tsp. Garlic Powder
1 tsp. Italian Seasoning
Directions
- Preheat oven to 350 F.
- Place all ingredients for the ground turkey and veggie meatloaf in a large bowl and mix together well. Don’t be afraid to use your hands, but make sure you wash them well when you are done mixing.
- Grease an 8” x 8” pan and transfer meat mixture to it. Form it into the pan.
- Bake for 60 minutes or until internal temperature reaches 165 F.

*Using a food processor will help you finely chop the onion and whichever other veggie you plan to use for your meatloaf.
