Parmesan Baked Chicken Strips

Ingredients
  

  • 2 medium chicken breasts, about 1.3 pounds
  • 1/2 cup Panko Bread Crumbs
  • 1 cup Shredded (not grated) Parmesan Cheese
  • 1/2 tsp Salt
  • 1/2 Tbsp Dried Thyme
  • 1/2 Tbsp Dried Basil
  • 1/3 cup Melted Butter

Instructions
 

  • Preheat oven to 400 F degrees.
  • Slice chicken breasts into strips about 1"wide.
  • In a medium bowl, mix together breadcrumbs, parmesan cheese, salt, thyme, and basil. Stir to combine.
  • Take each chicken strip and dip in butter and then into parmesan mixture.
  • Place chicken strips on baking sheet lined with foil and sprayed with non-stick spray.
  • Bake at 400 F for 20 minutes or until internal temperature of chicken is 160 F.

Parmesan Baked Chicken Strips

These chicken strips have been a hit in my family for the last couple of years, and I am finally getting around to sharing this amazing recipe!  They are simple and easy to make, and only take 20 minutes to bake.  One of my favorite flavors is fresh parmesan cheese, so make sure you get a good quality cheese.  Don’t buy the kind that has extra ingredients to keep it from “caking”.  Fresh is best!

Many chicken strip recipes use eggs to hold on the breading.  In this one, we use butter.  Yes, butter!  It tastes amazing!  It is really what gives this recipe the tenderness and flavor that I love so much!  Since we use butter, keep in mind, this meal is low-carb and has slightly higher fat.  Make sure to add some good vegetables to help balance out the nutrition.  When you add a salad and a steamed vegetable, you will have a delicious meal that the whole family will love!
