Roasted Parmesan Broccoli
I absolutely LOVE roasting vegetables! It is one of my favorite ways to prepare and eat fresh produce. Roasting brings out some wonderful flavors and with broccoli, it reduces the bitterness. Lastly, roasting vegetables helps to break down the cell walls of the veggies to make more nutrients available to your body!

Serves: 6
Ingredients
1 ½ pounds fresh broccoli florets cut to bite sized pieces
2 Tbsp Olive Oil
1 Tbsp Fresh lemon juice
½ tsp Salt
3 Cloves Garlic, minced
½ tsp Fresh Ground Black Pepper
¼ cup Parmesan cheese, shredded
Directions
- Preheat oven to 425 F and prepare your large cooking sheet by brushing it with olive oil.
- In a small bowl, mix olive oil, lemon juice, salt, garlic, and pepper and stir to combine.
- Place broccoli on sheet and drizzle with oil and lemon mixture.
- Sprinkle Parmesan cheese on top of broccoli.
- Bake at 425 F for 20-30 minutes or until desired softness is reached.

- Preheat oven to 425 F and prepare large cooking sheet by brushing with olive oil.
- In a small bowl, mix olive oil, lemon juice, salt, garlic, and pepper. Stir to combine.
- Place broccoli on sheet and drizzle with oil and lemon mixture.
- Sprinkle parmesan cheese on top of broccoli.
- Bake at 425 F for 20-30 minutes or until desired softness is reached.
- To prevent sticking, I like to line my sheet with aluminum foil before brushing olive oil on it—then there is no cleaning your cooking sheet!
- You can use frozen broccoli for this recipe! Adjust cooking directions as follows: steam frozen broccoli for 4-5 minutes or until slightly tender. Drain excess water. Place broccoli on the cooking sheet and follow directions above–but reduce roasting time to 10 minutes only.
- You can add other herbs and spices if desired. Chili powder and parsley als0 work well with this recipe!
