Roasted Parmesan Broccoli

I absolutely LOVE roasting vegetables!  It is one of my favorite ways to prepare and eat fresh produce.  Roasting brings out some wonderful flavors and with broccoli, it reduces the bitterness.  Lastly, roasting vegetables helps to break down the cell walls of the veggies to make more nutrients available to your body!

Broccoli is full of vitamins C, fiber, potassium, and iron.  It is also one of our vegetables with the highest amounts of protein.  Broccoli has been shown to help increase our immune systems and reduce our risk for some cancers https://www.ncbi.nlm.nih.gov/pmc/articles/PMC4103733/.

Ok, so who wants to eat more broccoli?  ME!

  • 1/4 Cup Shredded Parmesan Cheese

Instructions

  • Preheat oven to 425 F and prepare large cooking sheet by brushing with olive oil.

  • Place broccoli on sheet and drizzle with oil and lemon mixture.
  • Sprinkle parmesan cheese on top of broccoli.
  • Bake at 425 F for 20-30 minutes or until desired softness is reached.

  • To prevent sticking, I like to line my sheet with aluminum foil before brushing olive oil on it—then there is no cleaning your cooking sheet!
  • You can use frozen broccoli for this recipe! Adjust cooking directions as follows: steam frozen broccoli for 4-5 minutes or until slightly tender.  Drain excess water.  Place broccoli on the cooking sheet and follow directions above–but reduce roasting time to 10 minutes only.
  • You can add other herbs and spices if desired. Chili powder and parsley als0 work well with this recipe!
