Broccoli Slaw

This week I was trying to make my fresh vegetables last to reduce my number of trips to the grocery store.  I had bought some fresh broccoli including the stems and I was steaming the heads for dinner.  As I was about to throw away the stems, I started thinking about the waste!  Here I was in need of more fresh veggies and I was throwing away a perfectly good part of this broccoli.  I started brainstorming and came up with the idea of making a slaw!  It was much more simple than I was expecting and it was delicious!  I hope you and your family enjoy it as much as we did!

Ingredients

1 Bunch of Broccoli, including stems, makes about 4 cups chopped

¼ Small Red Onion

2 whole large Carrots

3/4 cup Dried Cranberries

½ cup Roasted Slivered Almonds

Dressing: ¼ cup Mayo, 1 Tbsp Rice Vinegar, 2 Tbsp Olive Oil, 2 Tbsp Honey, 1 tsp Dijon Mustard, salt and pepper to taste.

Directions

  1. Trim broccoli by cutting off leaves or any brown parts. Cut to size to fit in processor.
  2. Place broccoli, red onion, and carrot in a food processor and pulse until chopped. This equals about 6 pulses.
  3. Place vegetables in a large bowl and set aside.
  4. In a small bowl, combine mayo, rice vinegar, olive oil, honey, Dijon mustard, salt and pepper. Whisk together until well combined.
  5. Pour dressing over vegetables and mix well.
  6. Add cranberries and almonds, stir to combine. Enjoy!

Notes:

This broccoli slaw is so simple if you have a food processor.  If you do not have a processor, a food chopper will work well also.  You can reduce the sugar dramatically by reducing the amount of dried cranberries you include in this recipe.  Also, I love the flavor of the red onions in this slaw, but they can often be too strong for little ones.  You can substitute green onions as a milder choice.
