Easy Bar-B-Q Salmon

I had never eaten fish until college when my then boyfriend (now husband) decided he was going to change that.  He took me to Red Lobster.  I remember thinking it was “fine”.  I didn’t love it.  I didn’t hate it.  I thought maybe it would be nice to try to cook it myself sometimes.  This Bar-B-Q Salmon recipe was the beginning to a new love for fish.

About 8 years ago when my son was 1 year old, I kept reading about all of the amazing benefits of omega-3 fatty acids.  They promote healthy aging, heart health, brain health, and they decrease inflammation.  I really wanted to start feeding my son some fish!  I found a similar recipe to this in a magazine that I had.  I modified it to fit our family and our tastes, and this is what I came up with!  It is still by far my favorite fish recipe.  Even last week my sister tried it and said it was a huge hit with her entire family!

Serves: 4

Time: 30 minutes to marinade, 5 minutes to prep, 12-15 minutes to cook

Bar-B-Q Salmon Ingredients

¼ cup fresh lemon juice

1 lb Wild Salmon fillets

2 Tbsp brown sugar

1 tsp chili powder

¾ tsp cumin

½ tsp cinnamon

¼ tsp salt

Bar-B-Q Salmon Directions

  1.  Place salmon fillet on a greased baking sheet.  I like to line mine with parchment also to minimize clean up.
  2. Cover fillet with lemon juice and let sit at room temperature for about 20-30 minutes to marinade.
  3. Mix spices in a small bowl.
  4. Spread spices evenly over salmon fillet.
  5. Bake at 400 F for 12-15 minutes or until salmon flakes easily (internal temperature of 145 F).

Ingredients
