Green Chile Chicken Soup
This green chile chicken soup is perfect for chilly winter months. It is simple to prep and using the slow cooker helps all of the flavors to meld. You can serve it plain or you can dress it up and top with sour cream, cheese, cilantro, and tortilla chips. This soup is high protein and high fiber and it tastes amazing! Fresh roasted green chiles give it the perfect amount of spice.

Green Chile Chicken Soup
Ingredients
- 1 cup Salsa I like Sadie's not so hot
- 1 15 oz can Pinto beans, drained
- 1 15 oz can Black beans, drained
- 1 15 oz Canned whole corn
- 1 15 oz Rotel tomatoes
- 2 cups Chicken broth
- 1 cup Green Chiles
- 2 whole, boneless Chicken Breasts Cook chicken on stove over medium high heat with spice mixture (1/2 tsp salt, 1/2 tsp black pepper, 1 tsp garlic powder, 1 tsp dried cilantro, 1 Tbsp olive oil)
Instructions
- Add all ingredients to slow cooker.
- Stir well.
- Cook on low for about 6 hours or until soup is hot.
- Garnish with sour cream, cheese, cilantro and tortilla chips.

1 can Whole corn, drained, or 1 cup frozen corn
1 15 oz can Rotel tomatoes
2 cups Chicken broth
1 cup green chile
2 Chicken breasts, cook and shred or cut into cubes (about 1.3 pounds) Cook over medium-high heat on stove with spice mix: ½ tsp salt, ½ tsp black pepper, 1 tsp garlic powder, 1 tsp dried cilantro and 1 Tbsp olive oil.
Directions
Add all ingredients to crock pot. Stir well. Cook on Low for about 6 hours.
Garnish with sour cream, cilantro, shredded cheese and tortilla chips if desired.
