Chicken Gyros

These Gyros are a perfect addition to any family meal plan since even the kids will love them!

I am in love with Mediterranean style foods and cooking!  Mediterranean cooking uses a lot of herbs and spices.  This recipe includes garlic and oregano for its main flavors.  There are so many benefits to eating this way!  One of the major benefits is heart health.  The Mediterranean diet involves eating load of fruits, vegetables, and whole grains.  It also emphasizes healthy fats like olive oil and nuts.  Lastly, it encourages you to enjoy meals with family and friends!  This is probably my favorite aspect of this way of eating–I just love sharing good food with food friends and family!

Prep time: 15 minutes

Cook time: 8 minutes

Ingredients

1 lb. Lean Ground Chicken

1 Large Egg

1/4 cup Bread Crumbs

1 ½ tsp Oregano

1 tsp Garlic Powder

1 tsp Onion Powder

½ tsp Salt

6 Pitas

6 Lettuce Leaves

½ cup Chopped Fresh Tomatoes

1 cup Sliced Cucumbers

Sliced Onion

¾ cup Feta Cheese

Ingredients for Sauce:

1 cup plain Greek yogurt (2%)

1/3 cup finely chopped cucumber

2 Tbsp finely chopped white onion

1 clove garlic, minced

1 tsp honey

Directions:

  1. Mix ground chicken, egg, bread crumbs, oregano, garlic, onion and salt in a medium bowl with your hands. Form into 6 patties.
  2. Grill patties at 350 F for 5 minutes on each side or until internal temp is 160 F. You can also pan fry on medium high for about 5 minutes on each side or until internal temp is 160 F.
  3. While patties are cooking, in a small bowl, mix together Greek yogurt, chopped cucumber, chopped onion, garlic, and honey for sauce.
  4. To assemble pitas: Slice patties into 3 slices and arrange in pita. Fill with lettuce, cucumber, tomato, onion, and feta.  Top with sauce.  Enjoy!

Tip: place cucumber, onion, and garlic for the sauce in a food processor for a 2-3 second chop!
